Ginger Orange Glazed Salmon. An easy to make, flavourful marinade doubles as the base for an easy to prepare glaze to brush on baked salmon.

This is one of Spouse’s favorite quick meal ideas and it is quite delicious. She is a big salmon fan and with just a little preparation, this would make an ideal quick dinner any day of the week.

It bakes in only about 20-25 minutes and only needs to sit in the marinade for 30-60 minutes (no longer), so you can have this one can easily be on the table in about an hour.

Ingredients

For the marinade

  • 1 cup fresh squeezed orange juice
  • 1 tsp finely grated orange zest
  • 1.1/4 tsp pepper
  • pinch cinnamon
  • 1 tbsp finely minced or grated fresh ginger root
  • 1 clove minced garlic
  • 1 tsp salt

You will also need

  • 4 six ounce salmon fillets or steaks
  • 1/4 cup maple syrup or honey
  • 1 tsp corn starch
  • 1 ounce water

Instructions

For the marinade

  1. Mix together the orange juice, zest, pepper, cinnamon, ginger, garlic and salt.
  2. In a large Ziploc bag, pour half of this marinade over the salmon pieces. Allow to marinate for 30-60 minutes (no longer). Set the other half of the marinade aside for later.
  3. After the salmon has marinated, add the marinade from the salmon, plus the reserved marinade, to a small saucepan.
  4. Add the maple syrup or honey.
  5. Simmer very slowly for a few minutes to reduce the sauce a little then thicken it with a slurry made from one ounce of water and about 1 tsp cornstarch mixed together. Set the glaze aside to cool for a few minutes.|
  6. Preheat oven to 375 degrees F and bake the salmon for about 20 minutes or until fully cooked, depending in the thickness of your fillets. In the last 10 minutes of baking time brush on the glaze at least a couple of times.
  7. We most often serve this with plain steamed rice, so the remaining glaze/sauce can then be used to pour on the salmon and rice when serving.
